Preheat the air fryer to 390°F (200°C). You can skip this step if you're short on time — preheating isn't so necessary with air fryers.

In a large bowl, combine the diced sweet potatoes, red bell pepper, green bell pepper, and onion. Drizzle with olive oil and toss to coat. You can always add some protein here too, like diced halloumi, chorizo, even bacon!

Sprinkle the smoked paprika, garlic powder, ground cumin, salt, and black pepper over the vegetables. Mix well to evenly distribute the spices.

Transfer the seasoned vegetables to the air fryer basket.

Cook in the air fryer for 20 minutes, stirring halfway through, until the sweet potatoes are tender and slightly crispy.

2 green onions, sliced for garnish
