Preheat your air fryer to 180°C (350°F).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a mixing bowl, combine cooked quinoa, black beans, corn, chopped onion, cumin, salt, and pepper. Stir well.

Stuff each pepper with the quinoa mixture and top with shredded cheddar cheese.

Brush the peppers lightly with olive oil.

Place the stuffed peppers in the air fryer basket.

Air fry for 12 minutes or until the peppers are tender and the cheese is melted and bubbly.

Carefully remove the peppers and allow them to cool slightly before serving.
