Tips
For a richer flavor, add a pinch of nutmeg to the dry ingredients. To make a vegan version, replace the egg with a flaxseed egg (1 tbsp ground flaxseed + 2.5 tbsp water) and substitute milk with almond milk or your preferred plant-based milk. These banana fritters are best served warm with a drizzle of honey or a scoop of vanilla ice cream for an extra indulgent treat.

Peel and mash the ripe bananas in a medium-sized bowl until smooth and lump-free.

In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

Add the dry ingredients to the mashed bananas, followed by the egg, vanilla extract, and milk. Mix well until a thick batter forms.

In a separate shallow dish, combine the breadcrumbs and shredded coconut for the coating.

Using a spoon, scoop a tablespoon of the banana batter and roll it into the breadcrumb-coconut mixture to coat evenly.

Preheat the air fryer to 180°C (355°F). Lightly spray the air fryer basket with cooking spray to prevent sticking.

Place the coated banana fritters into the air fryer basket, making sure they are not touching each other.

Air fry the fritters for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

Remove the fritters from the air fryer and let them cool slightly before serving.
